Ingredients:

  • 4 large bell peppers (any color)
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground beef (or substitute with ground turkey or chicken)
  • 1 cup cooked rice (white, brown, or quinoa)
  • 1 can (14 ounces) diced tomatoes, drained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup shredded cheese (such as cheddar or mozzarella)

Optional garnish:

  • Fresh parsley, chopped

Instructions:

  1. Preheat the oven to 375°F (190°C). Line a baking dish with parchment paper or lightly grease it.
  2. Prepare the bell peppers: Cut off the tops of the bell peppers and remove the seeds and membranes. Rinse them under cold water and pat dry. Place the bell peppers in the prepared baking dish, standing upright.
  3. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until they become translucent and fragrant.
  4. Add the ground beef to the skillet and cook until browned, breaking it up into small crumbles. Drain any excess fat if necessary.
  5. Stir in the cooked rice, diced tomatoes, dried oregano, dried basil, salt, and pepper. Cook for an additional 2-3 minutes, allowing the flavors to meld together. Adjust the seasoning according to your taste.
  6. Spoon the filling mixture into each bell pepper, pressing it down gently and filling them to the top. If there is leftover filling, set it aside for later use.
  7. Sprinkle the shredded cheese over the stuffed bell peppers, covering the tops generously.
  8. Place the baking dish with the stuffed bell peppers in the preheated oven and bake for about 30-40 minutes, or until the peppers are tender and the cheese is golden and bubbly.
  9. Remove from the oven and let the stuffed bell peppers cool for a few minutes. Garnish with freshly chopped parsley if desired.
  10. Serve the stuffed bell peppers while they are still warm. They can be enjoyed as a standalone meal or accompanied by a side salad or crusty bread.
